This is a new segment we are doing here at The Original. Each month we will be hosting a cook off. The dish can be anything we would like to cook as long as it goes along with the theme. This month's theme was a bake off. I chose to bake my go-to dessert, key lime pie. I do not remember when or why I started baking key lime pies but it has become a staple dish of mine. The recipe that I use is so simple and easy that anyone can cook it. It all starts with a graham cracker crust, of course you can make your own but I did not have time so I just used a pre-made crust. Preheat the oven to 350 degrees F. Next you add 3 cups of sweetened condensed milk, ½ cup of sour cream, ¾ cup of lime juice, and the zest of 1 whole lime to a mixer and mix until everything is incorporated. I did not have sour cream so I used the same amount of greek yogurt, which serves the same purpose. Once everything is mixed pour the contents into the crust, be sure to scrape the bowl because you do not want any of this mix to go to waste. Put the pie into the middle rack of the preheated oven and set the timer for 5-8 minutes. You do not want this pie to brown only for tiny bubbles to pop on the surface. Take the pie out and let it chill in the fridge for 3 hours or until overnight. Serve and garnish as desired. I added whipped cream around the edges and made a palm tree out of sliced almonds and lime rind.
